Kerala Simple & Yummy Chicken Fry
Pan-fried until the edges go dark and crispy, this chicken fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 2 servings
- 2 piece Chicken
- 1 nos Onion — cut into small pieces
- 3 - Tomato — cut into small pieces
- 3 - Green chillies
- Ginger garlic paste - 1 tbsp
- 1/2 tsp Turmeric powder
- Chilly powder, to taste
- Spice powder, to taste
- Chicken masala/Garam masala, to taste
- Salt, to taste
- 2-3 Oil
Preparation
Step 1
Pour oil into a pan and heat it.
Step 2
Add ginger-garlic paste and sauté.
Step 3
Add onion and green chillies and cook well.
Step 4
Add turmeric powder, chilly powder, spice powder, chicken masala/garam masala and fry for sometime.
Step 5
Add tomato pieces and Stir everything together thoroughly.
Step 6
Take it off the heat. and leave it for sometime.
Step 7
Grind the mixture in a mixer grinder into a paste.
Step 8
Marinate the chicken pieces with the above mixture for 30 - 45 minutes.
Step 9
Cook this with a little water along with salt. Serve hot.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
