Kerala Simple & Yummy Chicken Curry
A deeply satisfying kerala simple & yummy chicken curry simmered slowly with freshly ground spices and coconut. The kind of gravy that thickens as it rests and rewards patience with layered, rounded flavour.
Ingredientsfor 4 servings
- 1 Lb Chicken with bones
- Ginger garlic paste - 1 tsp
- 2 tsp Chilly powder
- 4 tsp Coriander powder
- 2 tbsp Curd
- Salt, to taste
- 2 tbsp Dry coconut
- 2 nos Onion sliced, medium
- 3 tbsp Oil
- Coriander leaves A handful
Preparation
Step 1
Cut the chicken into medium size pieces. Wash and pat dry.
Step 2
Marinate the chicken with chilly powder, 2 tsp of coriander powder, ginger-garlic paste, salt and curd for about an hour.
Step 3
Heat the oil in a flat skillet.
Step 4
Cook onions till they turn light brown.
Step 5
Add the marinated chicken and Put the lid on and cook till half done.
Step 6
Add the rest 2 tsp coriander powder, salt and cook for another 10 minutes.
Step 7
Add the dry coconut and cook with lid open till chicken is done.
Step 8
Add the chopped coriander leaves and cook for a while.
Step 9
Take it off the heat.
Step 10
Goes well with rice.
Tip
Taste the gravy before adding the main ingredient. It should be well-seasoned and balanced on its own — the protein or vegetable will dilute it slightly.
