Kerala Simple Mutton Fry
The rich taste of Kerala Simple Mutton Fry – a spicy, dish made with roasted masalas, curry leaves, and tender mutton pieces.
Ingredientsfor 4 servings
- 1.5 Lb Mutton
- 2 tbsp Poppy seeds Khashakhasha
- 1 cup Coconut — grated
- 1 cup Onions — chopped
- 1 piece Ginger
- 1/2 tbsp Garlic — chopped
- 11/2 tsp Turmeric powder
- 2 tsp Chilli powder
- 3 Oz Ghee or dalda
- 1 piece Cinnamon (Karugapatta)
- 4 nos Cloves (Grambu)
- 4 nos Cardamom (Elakka)
Preparation
Step 1
Cut the meat into big pieces.
Step 2
If it is a tender meat, add 2 cups of water along with salt and cook till dry. Remove from fire.
Step 3
Fry the poppy seeds and grind all the ingredients into a fine paste except cinnamon, cloves and cardamom.
Step 4
Mix the ground masala and the cooked meat.
Step 5
Heat ghee or dalda in a small thick bottomed pan.
Step 6
Fry cinnamon, cloves and cardamom.
Step 7
Add meat, reduce heat and cook till dry, stirring till mutton is dry.
Step 8
Serve kerala mutton fry hot.
Step 9
Kerala mutton fry goes very well with porotta or rice.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
