Kerala Simple Chicken Stew
A gentle, coconut milk-based stew with soft vegetables and whole spices floating in a pale, fragrant broth. Kerala stew is quiet comfort food — not loud with chilli, but warm with cardamom and black pepper.
Ingredientsfor 4 servings
- 1/2 kg Chicken
- 1 nos Potato — cut into small pieces
- 3 nos Onions — finely chopped
- 3 nos Green chillies cut slit open length-wise
- 1 tbsp Garlic — cut into thin pieces
- 1 tbsp Ginger — cut into thin pieces
- 11/2 cup Milk full fat
- 1 tsp Allpurpose flour Maida
- 4 small Cinnamon — crushed (Karugapatta)
- 4 nos Cloves (Grambu)
- 4 nos Cardamom — crushed (Elakka)
- 3 Stems Curry leaves
- 4 tsp Oil
- 1 tbsp Vinegar
- Salt, to taste
Preparation
Step 1
Cook cut pieces of chicken with vinegar, potatoes, salt and a little water in a pressure cooker, upto 1 whistle.
Step 2
Warm the oil in a pan.
Step 3
Cook onions, green chillies, garlic and ginger in this order.
Step 4
Add crushed cinnamon sticks, cloves and cardamom and sautT, till onions turn brown.
Step 5
Sauté, till the fresh smell of masala leaves.
Step 6
Add the above mixture to the cooked chicken.
Step 7
Cover and bring everything to a boil.
Step 8
Dissolve the maida in milk and add this to the cooked chicken.
Step 9
Add curry leaves.
Step 10
Allow the contents to boil and stir it often.
Step 11
Turn off the heat immediately after it boils.
Step 12
Check for the salt.
Step 13
Serve while still hot with appams.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
