Kerala Rice Pathiri
A staple flatbread of Kerala kitchens, cooked on a hot tawa until it puffs and develops golden spots. Tear it apart with your hands and use it to mop up every last drop of curry.
Ingredientsfor 4 servings
- 11/2 glass Rice flour or idiappam podi
- 2 Or Water
- Salt, to taste
- 1 tsp Oil
Preparation
Step 1
Boil water in a pan along with a tsp of oil and salt.
Step 2
When it boils, lower the flame to minimum.
Step 3
Add the flour to the water while stiirring as you add.
Step 4
Keep stirring to make a smooth and soft dough.
Step 5
Take it off the heat. when u feel the colour of the flour is changing and the dough has turn soft.
Step 6
Make small balls off the dough and roll out like chappathis.
Step 7
Heat pan and place the pathiris on it.
Step 8
Do not use oil as for chappathis.
Step 9
Cook on both the sides.
Tip
Resting the dough is not optional — it relaxes the gluten and makes the dough easier to roll. At least 30 minutes, ideally longer.
