Kerala Prawns Masala
Fresh prawn cooked the Kerala way — with coconut, curry leaves, and a tartness that comes from kudampuli or tamarind. Coastal Kerala cooking at its simplest and best.
Ingredientsfor 4 servings
- 1/2 kg Prawns deshelled and — cleaned
- 1/2 tsp Turmeric
- 1 nos Tomato — cut into small pieces
- Salt, to taste
- 1/4 cup Coconut oil or sunflower oil
- 3 tbsp Fresh coconut pieces
- 5-6 piece Garlic
- 2 tbsp Eastern chillie powder
- 1-2 tsp Freshly groundpepper powder
- For garnishing and mixing
- 1 nos Onion medium sized
- 5-6 nos Green chillies
- 3 Stalk Curry leaves
Preparation
Step 1
Cook the prawn along with ingredients no1in a low flame. :- No need to add water, as the prawn get cooked it will give out water).
Step 2
Let the water gets evaporated completely.
Step 3
Cut the onion thinely and lengthwise.
Step 4
Microwave it for 1-2 min.
Step 5
Add oil in a non stick pan and cook the onion till it get golden brown.
Step 6
Set it aside.
Step 7
Add the green chillies and curry leaves and cook it, stirring for 1-2 minutes.
Step 8
When the colour turns brighter set it aside along with the onion.
Step 9
In the same oil add the coconut pieces till it becomes light brown.
Step 10
Add garlic and cook for 2 min and add the chillie powder. :-Make sure that the pan is on a low flame so that the powder will not get burnt cook it, stirring for another 2-3 min.
Step 11
Add the cooked prawns and cook it, stirring for 5 minutes stirring occasionally.
Step 12
Add freshly ground pepper powder and cook for another 1 minute.
Step 13
Turn off the heat and mix half of the onions green chillies and curry leaves.
Step 14
Remove it in a serving dish and garnish it with the remaining onion green chillies and curry leaves.

Note:- If you use kasmiri chillie powder it will give a deeper colour to the dish.
Tip
Never stir a fish curry with a spoon. Shake the pot gently to coat the pieces — stirring breaks them apart.
