Kerala Pizza
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 3 servings
- 1 cup All purpose flour Maida
- 1 nos Egg
- 1 tsp Sugar
- 1 cup Milk
- 1 tsp Baking powder
- 2 tsp Butter
- Salt, to taste
- 1 cup Boneless chicken
- 2 tsp Butter
- 1 tsp Pepper powder
- 1 nos Capsicum — chopped
- 2 tsp Soya sauce
- 1 tbsp Olive oil
- 1/2 cup Mozzarella cheese — grated
- Salt, to taste
Preparation
Step 1
For preparing kerala pizza, cook chicken pieces with pepper powder, soya sauce, salt and 1/2 cup of water till the water evaporates.
Step 2
Chop the chicken.
Step 3
Cook the chicken with capsicum, butter and olive oil till it turns lightly browned. take it off the heat and set aside.
Step 4
Prepare a batter by mixing together maida, egg, sugar, milk, baking powder, butter, salt and a little water.
Step 5
Pour a ladle full of batter on a frying pan and spread it. Add a little butter.
Step 6
When holes starts to appear on the pan cake, spread 3 tsp of chicken filling on top of it.
Step 7
Spread grated cheese.
Step 8
Turn the pan cake and take it off the heat after 2 minutes.
Step 9
Kerala pizza is ready. Serve hot with any sauce.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
