Kerala Pineapple Payasam
Kerala pineapple payasam is a fantastic dessert prepared on special occasions. This is a typical South Indian dessert made with Pineapple, coconut milk and sugar. The fruity pineapple flavor, creamy coconut milk used will make this dish unque and tasty.
Ingredientsfor 10 servings
- 2 cup Pineapple
- 1/2 cup Sugar
- 3 cup Medium thick coconut milk
- 1/2 cup Condensed milk
- 1/2 cup Sabudana Chowari
- Salt A pinch
- 2 pinch Dried ginger powder Chukku
- 1/4 tsp Cardamom powder (Elakka)
- 1 tsp Ghee — optional
- 10 nos Cashew nuts — optional
- 2 tsp Yellow colour mix one pinch into 2 tsp of water
Preparation
Step 1
Chop pineapple into fine pieces.
Step 2
Cook them in 1 cup of water along with 2 tbsp of sugar.
Step 3
When cool, grind this cooked pineapple into a fine paste.
Step 4
Get a deep bottomed pan.
Step 5
Add sugar to this pineapple paste and Let it cook for 10 minutes.
Step 6
Cook sabudana in 2 cups of water (add sabudana in boiling water and cook).
Step 7
Add cooked sabudana and yellow food colour to the pineapple paste.
Step 8
Let it bubble for 5 minutes.
Step 9
Add one pinch of salt to balance the sweetness.
Step 10
Stir in coconut milk to the pineapple mix and boil. Stir continuously.
Step 11
When it begins to boil, add condensed milk to this.
Step 12
You can increase or decrease the quantity of sugar and condensed milk.
Step 13
Switch off the gas and add the cardamom powder and ginger powder.
Step 14
Close the pan for half an hour to keep the flavour of the payasam.
Step 15
If u want, u can add cashewnuts (fry them in ghee and add) and if the pineapple is not that ripe enough, u can add 2 drops of pineapple essence into it.
Step 16
So the pineapple payasam is ready to be served.

Tip
The payasam will thicken significantly as it cools. Stop cooking when it is still slightly thinner than your target consistency.
