Kerala Pineapple Curry
A mouthwatering vegetarian side dish that goes well with hot rice. The slightly sweet and tangy Kerala Pineapple Curry is an awesome favorite in Kerala Cuisine.
Ingredientsfor 4 servings
- 1 nos Pineapple
- 1 cup Coconut — grated
- 1 cup Curd
- 2 - Green chillies
- 1 piece Ginger
- 1/2 tsp Turmeric powder
- 1/2 tsp Cumin seeds (Jeerakam)
- 2 nos Garlic pods small
- Salt, to taste
- Mustard seeds
- Curry leaves
- Onions (Kunjulli)
- Dry red chillies (Kollamulaku)
- Fenugreek seeds (Uluva)
Preparation
Step 1
For preparing Kerala Pineapple Curry, first cut the pineapple into small cubes.
Step 2
Heat a little oil in a pan.
Step 3
Cook the green chillies and ginger.
Step 4
Add the tumeric powder, chilly powder and salt.
Step 5
When the oil separates, add the pineapple pieces and cook.
Step 6
While it gets cooked, grind together coconut, garlic, cumin seeds and turmeric into a fine paste.
Step 7
Add this to the cooked pineapple. Stir everything together thoroughly.
Step 8
Allow it to boil & cool.
Step 9
Add the whipped curd.
Step 10
Do not boil.
Step 11
Season with mustard seeds, dry red chillies, small onions, curry leaves and fenugreek seeds.
Step 12
Serve Kerala Pineapple Curry with rice.
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
