Kerala Pavakka Theeyal
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 4 servings
- 2 nos Bitter gourd medium sized)(cut into thin slices, Pavakka
- 1 cup Coconut — grated
- 2 tsp Coriander seeds
- 5 nos Red Chilly
- 1/4 cup Shallots kochulli — sliced
- Curry leaves a sprig
- 2 tsp Tamarind water
- Salt, to taste
- 3 tsp Oil
- 1/2 tsp Mustard seeds
Preparation
Step 1
Heat a kadai and add the oil.
Step 2
Add the bitter gourd pieces and sautT well.
Step 3
Cook the bitter gourd pieces on low heat with a closed lid( no need to add water).
Step 4
Get another frying pan and fry the grated coconut, shallots, coriander seeds and red chillies, till brown.
Step 5
Make a thick paste by grinding all the fried ingredients (use a little water). 6)Heat the oil in a kadai and let the mustard seeds crackle and curry leaves.
Step 6
Add the ground coconut paste, tamarind water, salt, pour 1 cup water and stir it well.
Step 7
Add the cooked bitter gourd pieces and give it a good stir.
Step 8
Let it cook for 10 minutes on low heat till the gravy thickens.
Tip
