Kerala Pavakka Curry
A traditional Kerala curry where bitter_gourd simmers gently in a spiced coconut gravy until every piece soaks up the flavours. The curry leaves and raw coconut oil finish add that characteristic Kerala fragrance.
Ingredientsfor 3 servings
- 3 nos Bittergourd
- 2 nos Onion
- Ginger garlic paste - 1 tsp
- 1 tsp Coriander powder
- 1 tsp Chilli powder
- 1 nos Tomato — optional
- ½ tsp Turmeric powder
- Salt, to taste
- ½ cup Water
- 1 tbsp Oil
Preparation
Step 1
Cut the bittergourd into small pieces.
Step 2
Pour oil into a kadai and heat it.
Step 3
Add chopped onion and cook until it turns soft.
Step 4
Add ginger-garlic paste and stir for a few seconds.
Step 5
Add chilli powder, coriander powder, turmeric powder and salt and cook well.
Step 6
Add chopped bittergourd pieces. Stir everything together thoroughly.
Step 7
Add enough water to cook the bittergourd. give it a good stir.
Step 8
Pour the tamarind pulp into the pan.
Step 9
Put the lid on and cook on a low flame till a thick gravy is formed.
Step 10
Open the lid and give it a good stir.
Tip
For a thicker gravy, cook uncovered on medium heat for the last few minutes. For a thinner consistency, add a splash of warm water.
