Kerala Parotta | Kerala Paratha
A staple flatbread of Kerala kitchens, cooked on a hot tawa until it puffs and develops golden spots. Tear it apart with your hands and use it to mop up every last drop of curry.
Ingredientsfor 4 servings
- 2 cup All purpose flour Maida
- 1/4 cup Wheat Flour
- 1 nos Egg
- 1/2 glass Milk
- 1/2 tsp Soda powder
- Sugar A little
- Salt, to taste
- Oil, to taste
Preparation
Step 1
Mix together maida and wheat flour in a vessel.
Step 2
Add oil and the rest of the ingredients and make a soft dough. Make sure to pat the dough hard on a clean surface to make it soft.
Step 3
Cover the dough with a wet cloth for at least 4 hrs.
Step 4
Before making the parottas, knead the dough once again with hands.
Step 5
On a clean surface, rub oil.
Step 6
Pluck small balls off the dough and roll them out like chappathis but in oval shape.
Step 7
Make pleats so as to look like a hand made paper fan.
Step 8
Roll it holding on one end to form a round. This is done to get the layers. Then roll out to make it like a chappathi.
Step 9
Make sure to roll only on one side with the chappathi stick.
Step 10
Put this on a pan on low heat till the kerala parotta (paratha) is ready.
Step 11
Once done, use both hands and pat on the sides of the kerala parotta (paratha) to get the layers.
Step 12
Kerala Parotta (paratha) is ready.
Step 13
Serve Kerala Parotta (paratha) with beef or mutton or chicken curry.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
