Kerala Orange Souffle
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 4 servings
- 1 cup Orange juice
- 1 tbsp Gelatin
- 1/2 cup Sugar — powdered
- 11/2 cup Whip cream
- Egg whites from 2 eggs
- 3 Drops Orange colour
- 1 tsp Orange essence
Preparation
Step 1
Double boil the gelatin and add this to orange juice.
Step 2
Keep this in freezer for about 10 minutes.
Step 3
Blend this in a mixer.
Step 4
Add sugar and colour and blend again.
Step 5
Add whip cream and essence and blend again.
Step 6
Beat the egg white until it becomes fluffy and add this to the orange mixture.
Step 7
Keep in freezer for about 30 minutes.
Step 8
Garnish with orange peel, orange slices and cream.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
