Kerala Nadan Konju Fry - Big head Prawn fry is a delicacy in kerala. This konju fry is available in toddy shop and it is really tasty. Konju look nice with the big head and the long blue legs.
Ingredientsfor 2 servings
- 2 Numbers Konju
- 1 Tablespoon Kashmiri Chilly powder
- 1/2 Teaspoon Turmeric powder
- 1 Teasponn Pepper powder
- Salt, to taste
- 4 Numbers garlic
- 2 Stem Curry leaves
- 3 Number Green chillies
- Coconut oil Enough to fry konju
Preparation
Step 1
Get 2 Konju (prawns).
Step 2
Clean konju by cutting the top shell.
Step 3
Press on the side of the head of prawn to clean it. All the waste will come out.
Step 4
Then remove the vein from the top.
Step 5
Mix all the powders in water. Keep it thick.
Step 6
Apply the paste to the prawn and keep it for 15 minutes.
Step 7
Warm coconut oil in a pan and fry the prawns in it. Turn the side when one is almost done.
Step 8
When konju is 75% cooked, add curry leaves, green chillies and garlic. Please make sure garlic do not get burned. It should be crispy.
Step 9
Get the prawns from the oil with the all the masala.
Step 10
The Kerala Traditional konju fry with rice.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
