Kerala Mutton Stew
A very healthy stew good for both children and adults alike.
Ingredientsfor 3 servings
- 1/2 kg Mutton — cut into medium sized pieces
- 2 - Green chillies
- 1 small Ginger — chopped
- 8 - small Onions (Kunjulli)
- Pepper Few — crushed
- 1/2 Of Coconut
- 2 nos Onion — sliced
- 1 nos Cloves (Grambu)
- 1 nos Cinnamon (Karugapatta)
- 7 - Baby potatoes
- Salt, to taste
Preparation
Step 1
Fry sliced onions, till slightly brown.
Step 2
Add slit green chillies, ginger, crushed pepper, cloves and cinnamon.
Step 3
Add mutton and salt and fry for about 5 minutes.
Step 4
Add potatoes.
Step 5
Extract 1 cup of thick coconut milk. Set aside.
Step 6
Extract thin milk, the quantity depending upon the quantity of the curry you need.
Step 7
Do not make it too watery.
Step 8
Add the 2nd or thin coconut milk and cook upto 3 whistles or till mutton is done.
Step 9
After opening the lid, add whole small onions and boil for another 5 minutes.
Step 10
Add the 1st or thick coconut milk.
Step 11
Cover with its lid and turn off the heat.
Step 12
Garnish with coriander leaves, if desired.
Tip
Low and slow is the only way with mutton. Rushing the cooking gives you tough, chewy meat instead of fork-tender pieces.
