Kerala Mixture
A famous snack in South India. This Kerala Mixture we generally do at festival times. Mainly in Diwali times.
Ingredientsfor 10 servings
- 2 cup Besan flour
- 2 tsp Chilli powder
- 1 tsp Turmeric powder
- 1 tsp Asafatodia
- 1 cup Groundnut
- 1 cup Split channa dal
- Salt, to taste
- 2 cup Oil — for frying
- 10 Curry leaves
- 10 Garlic
- 5 Red chilli
Preparation
Step 1
In a vessel mix gram flour,turmeric powder and chili powder.
Step 2
Add water and knead into a smooth dough by adding water little by little.
Step 3
Set aside.
Step 4
Pour oil into a kadai and heat it.
Step 5
Fill this dough in idiyappam mould.
Step 6
Then press the dough to hot oil in circular motion.
Step 7
Fry for 2 minutes until it gets golden colour.
Step 8
Taken this from oil and set aside.
Step 9
In another vessel mix gram flour,salt and water to make a batter.
Step 10
Add this batter through holes of strainer.Fry this and set aside.
Step 11
In a vessel first break sev into small pieces,add fried boondi to this.set aside.
Step 12
Then fry ground nut.
Step 13
Fry split channa dal also.
Step 14
Next, add this fried split channa dal and ground nut to boondi mix.
Step 15
Heat the oil in another kadai add garlic pods,curry leaves and redchilies cook for a minute.
Step 16
Add this to boondi mix.
Step 17
Add little chilli powder,salt and asafoetida to this mix and Fold everything together gently.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
