Kerala Mango Pickle
Kerala Mango Pickle / Manga Pickle is a Spicy, Aromatic and Sinfully Addictive Pickle made with Gingelly oil and Spices. It is perfect sides for all kinds of rice dish. The taste, color, preparation, and the spices used vary from place to place.
Ingredientsfor 20 servings
- 1 nos Mango large
- 1/4 cup Red chilly powder
- 1/4 tsp Turmeric powder
- 1/2 tsp Fenugreek seeds (Uluva)
- 1/4 tsp Mustard seeds
- 1/4 tsp Asafoetida (Kayam)
- 1/4 cup Salt
- 1/4 cup Gingelly oil/cooking oil
Preparation
Step 1
Cut the mango into small dices and remove the pit.
Step 2
Add salt and turmeric and set aside for 5-6 hrs.
Step 3
Add red chilly powder and mix it well.
Step 4
Roast fenugreek seeds, dry grind it and set aside.
Step 5
Warm the oil in a pan.
Step 6
Add mustard seeds and when they start to allow to crackle, add asafoetida.
Step 7
Allow it to cool.
Step 8
When the oil becomes room temperature, mix it with the mango pieces.
Step 9
Add the roasted fenugreek powder and Stir everything together thoroughly.
Step 10
Serve Manga Pickle with rice and curd.
Tip
Mustard oil needs to be heated to smoking point and then cooled before adding to the pickle. This removes its pungent raw flavour.
