Kerala Kappa Thoran
Simple, honest, and on every Kerala lunch plate — tapioca thoran is coconut oil, grated coconut, and a handful of spices working quietly together. No fuss, just good food.
Ingredientsfor 4 servings
- 1/2 kg Kappa/tapioca cut and boiled
- 1 cup Coconut — grated
- 4 nos Dry red chillies
- 1 nos Onion
- 4 Cloves Garlic
- Curry leaves, a few
- 1 tsp Mustard
- Coconut oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing kerala kappa thoran, first cook the tapioca and set aside.
Step 2
Roughly grind onion, garlic and dry red chillies and set aside.
Step 3
Set a pan over medium heat and pour in the oil, let the mustard seeds crackle, add the ground onion paste and fry it with required salt.
Step 4
Stir in tapioca pieces and coat well.
Step 5
Finally add coconut grated into it.
Step 6
Stir everything together thoroughly. Kerala kappa thoran is ready.
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
