Kerala Homemade Lemon Dates Pickle | Sweet And Sour Naaranga Achar
Sun-soaked and fiery — this mixed pickle is the small jar that sits on every Kerala dining table and makes plain rice taste complete. A little goes a long way.
Ingredientsfor 20 servings
- 2 cup Lemon
- 1 cup Dates
- 3/4 cup Ginger & garlic (Chopped
- 4 nos Green chilly
- 1/2 cup Vinegar
- 1 tbsp Mustard seeds
- 1 tbsp Fenugreek seeds
- 3 tsp Red chilly powder
- 2 tbsp Sesame oil
- Salt, to taste
Preparation
Step 1
Chop lemon, dates, ginger and garlic.
Step 2
Grind half of the chopped dates with 3 tbsp vinegar into a smooth fine paste.
Step 3
Dry roast fenugreek seeds and mustard seeds for 3-4 minutes. Set aside.
Step 4
Heat sesame oil in a vessel and add chopped ginger, garlic and green chillies. cook it, stirring for 5 minutes in medium flame.
Step 5
Next, add lemon, remaining dates and dry roasted mustard & fenugreek seeds. Fold everything together gently and Continue cooking for 2 to 3 minutes.
Step 6
Add previously prepared dates paste and Stir everything together thoroughly.
Step 7
Add red chilly powder, salt and vinegar.
Step 8
Fold everything together gently and take it off the heat. Let it cool and store in an airtight container for one week. After one week the pickle is ready for use.

Tip
Mustard oil needs to be heated to smoking point and then cooled before adding to the pickle. This removes its pungent raw flavour.
