Kerala Egg Sandwich
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 5 servings
- 5 nos Eggs hardboiled
- 3 nos Onion
- 2 nos Green chillies
- Curry leaves A, a few
- 2 tbsp Oil
- 3 tbsp Allpurpose flour Maida
- Salt, to taste
Preparation
Step 1
Cut each egg into two halves and take out the yolk with a spoon without breaking the white part.
Step 2
Chop onions and green chillies into small pieces.
Step 3
Cook onion and green chillies in oil for about 5 minutes.
Step 4
Add curry leaves.
Step 5
Add salt.
Step 6
Add the yolk and cook it, stirring for about 2 minutes.
Step 7
When cool, make small balls and fill this inside the half of the egg.
Step 8
Make a thick batter of maida with water and salt.
Step 9
Dip each egg piece in maida batter.
Step 10
Get some oil in a frying pan.
Step 11
Fry both the sides of the egg.
Step 12
Be careful when you add salt since you add it twice i.e.,in the filling and also in the batter.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
