Kerala Egg Masala
This egg, a subtly spiced sauce with coconut and spices is one of the classic recipes of Kerala dishes. It goes well with Idiyappam, Appam etc.
Ingredientsfor 6 servings
- 6 nos Boiled eggs — cut into 2
- 1/2 cup Coconut — grated
- 2 nos Green chillies — chopped
- 1/4 tsp Ginger — thinly sliced
- 1/4 tsp Garlic — thinly sliced
- 1/4 tsp Cumin seeds (Jeerakam)
- 1/4 tsp Turmeric powder
- 1/2 tbsp Chilly powder
- 1/2 tbsp Coriander powder
- 1 nos Onion chopped, medium sized
- 1 nos Tomato — chopped
- 1/4 tsp Mustard seeds
- Curry leaves, a few
- 2 nos Whole red chillies cut in half
- Salt, to taste
- Oil, to taste
Preparation
Step 1
For preparing kerala egg masala, first half the boiled eggs. Set aside.
Step 2
Grind together coconut, cumin seeds, chilly powder, coriander powder and turmeric powder.
Step 3
Set a kadai over medium heat and pour in the oil/wok and let the mustard seeds crackle. Add whole red chillies, curry leaves and fry.
Step 4
Next, add the sliced onion, ginger, garlic and green chillies. cook well.
Step 5
Add the tomatoes and cook well till well blended.
Step 6
Add the ground coconut mixture and cook well till oil come out of the mixture.
Step 7
Add salt and little water and give it a good 5 minute boil. Stir in the boiled eggs. When gravy becomes thick, remove pan from flame. Kerala egg masala is ready.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
