Kerala Egg Curry With Coconut Milk | Kerala Mutta Curry

Ingredientsfor 5 servings
- 5 nos Eggs(boiled
- 2 nos Green chilly — slit
- 3 nos Onion — thinly sliced
- 1 tsp Coriander powder
- 1 tsp Chilly powder
- 1/4 tsp Turmeric powder
- 1 tbsp Ginger-garlic — crushed
- 1 tsp Garam masala
- Curry leaves, a few
- 2 sprig Coriander leaves
- 2 cup Coconut milk
- Salt, to taste
Preparation
Step 1
First boil eggs in water.
Step 2
Remove the shells of egg.
Step 3
Set a kadai on the stove put oil and add mustard seeds. When it crackles add onions.
Step 4
Next add ginger garlic cushed, green chillies and curry leaves.
Step 5
Add coriander powder, chilli powder and turmeric powder. Stir in garam masala powder.
Step 6
Fry for some time in low flame.
Step 7
Add little water and boil. Add salt also.
Step 8
Add coconut milk to this. Add the previously boiled eggs.
Step 9
Mix all together and let it bubble for 5 minutes. Garnish with freshly chopped coriander leaves.
Step 10
Now Kerala Mutta Curry is ready to serve.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
