Kerala Easy Pork Curry
one of the most beloved dishes in Kerala cuisine that you will often find on menus during festivals, family gatherings.
Ingredientsfor 4 servings
- 1 kg Pork without outer skin layer
- 2 tbsp Red chilly powder
- 1 tbsp Whole black pepper
- 3 tbsp Coriander powder
- 1 tsp Turmeric powder
- 5 nos Cloves (Grambu)
- 2 piece Cinnamon (Karugapatta)
- 1 nos Cardamom (Elakka)
- ½ tsp Cumin seeds (Jeerakam)
- 2 piece Ginger — finely chopped
- 1 Full pod Garlic Medium
- ½ cup Button onions — cut into small pieces, kunjulli
- 2 nos Bay leaves
- 4 Stems Curry leaves
- 2 tsp Vinegar
- Salt, to taste
- Coconut oil, to taste
Preparation
Step 1
Cut pork into medium sized pieces, remove outer layer of the skin, wash and set aside. Marinate with salt and pepper powder.
Step 2
Grind together all masala ingredients into a paste: red chilly powder, black pepper, coriander powder, turmeric powder, cloves, cinnamon, cardamom cumin seeds, ginger/garlic paste and keeps aside.
Step 3
Cook the onion in oil.
Step 4
Add the ground masala and wait till the oil separates from the masala.
Step 5
Add the pork along with curry leaves and pressure cook up to 3 whistles.
Step 6
Add more hot water, if needed.
Step 7
Check if pork is completely cooked and tender.
Step 8
Add curry leaves and give it a good stir.
Step 9
Serve Kerala Easy Style Pork Curry hot with white rice or chappathis.
Tip
The oil separating from the masala is your signal that the base is properly cooked. Do not add the main ingredient before you see those pools of oil on the surface.
