Kerala Easy Fried Rice
A nutritious combo of a variety of veggies blended with white rice and usually served with an accompaniment like raitha or curd. an easy to prepare dish and is a whole meal in itself.

- 2 cup Rice
- 6 tbsp Butter
- 2 Sticks Cinnamon (Karugapatta)
- 4 nos Cloves (Grambu)
- 3 - Cardamom (Elakka)
- Salt, to taste
- 4 cup Water
- 2 nos Onions large
- 1 piece Ginger
- 4 nos Garlic cloves
- 100 g Carrot — chopped
- 100 g Beans — chopped
- 100 g Cabbage — finely chopped
- 1 nos Capsicum — chopped
- Celery(chopped
- 1 tsp Pepper
- Soya sauce
- Chilly sauce
- Fried onions
- Fried cashewnuts
- Fried raisins(Onakka munthiri
Preparation
Step 1
For prepaaring Kerala Easy Fried Rice, first heat 4 tbsp of butter in a pan.
Step 2
Add cinnamon and cloves.
Step 3
Add the well cleaned rice and fry it.
Step 4
Add 4 cups of water along with salt and cook it well.
Step 5
Heat 2 tsp of butter in another pan.
Step 6
Add chopped onions and stir it.
Step 7
When it becomes brown, mix the ginger and garlic paste and stir, till it`s aroma emits.
Step 8
Add chopped carrots, beans and cabbage.
Step 9
Add required salt and pepper.
Step 10
Vegetables should be half cooked.
Step 11
Add capsicum and celery.
Step 12
Mix cooked rice and stir it well on a low flame.
Step 13
Stir everything together thoroughly with soya sauce and chilly sauce.
Step 14
Garnish with fried onions, cashew nuts and raisins.
Step 15
Serve Kerala Easy Fried Rice hot.
Step 16
Boneless cooked and minced meat(100 gm) and two scrambled eggs can make the dish non-vegetarian.
Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
