Kerala Easy Fish Fry(Meen)
Pan-fried until the edges go dark and crispy, this fish fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.

- Fish
- 8 - small Onions (Kunjulli)
- Garlic, to taste
- Ginger, to taste
- 2 tbsp Red chilly powder
- 1 tbsp Pepper
- Salt, to taste
- Fenugreek A pinch (Uluva)
Preparation
Step 1
Grind all the ingredients to a fine paste.
Step 2
Marinate the fish with this paste and set aside for at least 30 minutes.
Step 3
Get a shallow pan and fry the fish on low heat.
Step 4
Make sure that you fry it properly on all sides.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
