Kerala Easy Egg Masala
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 2 servings
- 3 nos Eggs
- 1 nos Onion big
- 1 tsp Ginger paste
- ½ tsp Pepper powder
- 1 tsp Chilly powder
- ¼ tsp Tumeric powder
- Curry leaves A, a few
- ½ Of Tomato
- 2 tbsp Oil
- 1 tsp Mustard seeds
- ½ tsp Aniseeds (Perinjeerakam)
- Salt, to taste
Preparation
Step 1
Boil eggs, remove the shells and cut into two halves and set aside.
Step 2
Warm the oil in a pan.
Step 3
Let the mustard seeds crackle.
Step 4
Add aniseeds.
Step 5
Add onions and curry leaves and cook well for sometime.
Step 6
Add pepper.
Step 7
Add ginger paste and sauté, till the oil clears.
Step 8
Add chilly powder and turmeric powder and Stir everything together thoroughly.
Step 9
Add tomato and cook for about 5 minutes.
Step 10
Add the eggs.
Step 11
Add 1/2 - 1 cup of water and salt to taste.
Step 12
Simmer and cook, until it boils.
Step 13
Goes well with chappathis.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
