Kerala Easy Crab Curry
A deeply satisfying kerala easy crab curry simmered slowly with freshly ground spices and coconut. The kind of gravy that thickens as it rests and rewards patience with layered, rounded flavour.
Ingredientsfor 4 servings
- 1 kg Crab
- 2 nos Onions — chopped
- 1/2 tsp Ginger — chopped
- 2 nos Garlic — chopped
- 2 nos Green chillies
- Curry leaves A, a few
- 1 tsp Chilly powder
- 1/4 tsp Turmeric powder
- 1/2 tsp Coriander powder
- 5 tsp Tomato paste
- 1 tsp Salt
- 5 tsp Oil
Preparation
Step 1
Cut crab into small pieces.
Step 2
Add chilly powder, turmeric powder, coriander powder and salt.
Step 3
Add one small cup of water and boil it for ten minutes in a vessel.
Step 4
Warm the oil in a pan.
Step 5
Fry onion till brown.
Step 6
Add curry leaves, ginger, garlic and green chillies and fry well.
Step 7
When it becomes lightly browned, add tomato paste and mix it nicely.
Step 8
Pour the crab contents into this pan and let it go for ten minutes on a low flame.
Step 9
When the gravy becomes thick, turn off the heat.
Step 10
Goes well with chappathi & rice.
Tip
Let the curry rest for at least 15 minutes after cooking — the flavours deepen as it sits. Reheated curry almost always tastes better than fresh.
