Kerala Dry Prawns Fry (Unakka Chemmeen)
Dry prawns (unakka chemmeen) are dry fried and cooked with onion, garlic, tamarind and other ingredients.
Ingredientsfor 4 servings
- 100 g Dry prawns remove head and tail
- 1 nos Onion — finely sliced
- 1 tsp Red chilly powder
- Turmeric powder A pinch
- ½ tsp Black pepper powder
- ½ tsp Vinegar
- 2 sprig Curry leaves
- 50 g Oil
- Salt, to taste
Preparation
Step 1
Wash and keep the dry prawns in water for 5 minutes and squeeze out the water. Spread it in a flat surface.
Step 2
Mix together the chilly powder, turmeric powder, pepper powder, vinegar and salt. Add the prawns and Fold everything together gently.
Step 3
Warm the oil in a pan and fry the onion and curry leaves till golden brown. Set aside.
Step 4
Fry the marinated prawns in the same oil till crispy. Drain and garnish with fried onion and curry leaves.

Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
