Kerala Chicken Fry | Nadan Kozhi Porichathu
This chicken, also known as Nadan Kozhi Porichathu, is a culinary delight that captures the essence of Kerala's diverse food culture.
Ingredientsfor 6 servings
- 12 nos Chicken pieces(Large
- 2 tbsp Red chilly powder
- 1 tsp Pepper powder
- 1 tbsp Fennel seeds — powdered (Perinjeerakam)
- 7 nos Garlic cloves — crushed
- 1/2 tsp Turmeric powder
- 1 tsp Vinegar
- 2 tbsp Yogurt/Curd
- 1/2 cup Coconut — grated
- Curry leaves, a few
- Salt, to taste
- Oil — for frying
Preparation
Step 1
Clean the chicken, remove skin, make slashes and set aside.
Step 2
Mix together red chilly powder, pepper powder, fennel seeds, garlic, turmeric powder, vinegar and yogurt.
Step 3
Marinate the chicken with the above mixture and set aside for 2 or more hours.
Step 4
Heat the oil in a frying pan.
Step 5
Fry in hot oil the chicken, till dark brown.
Step 6
Finally, fry the coconut and curry leaves, till brown.
Step 7
Garnish the chicken fry with the above.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
