Kerala Chicken Curry - Nadan Style
A traditional Kerala curry where chicken simmers gently in a spiced coconut gravy until every piece soaks up the flavours. The curry leaves and raw coconut oil finish add that characteristic Kerala fragrance.
Ingredientsfor 4 servings
- 1 kg Chicken
- Coriander leaves few, Malliyila
- 5-6 Flakes Garlic
- 1 piece Ginger
- 2 tbsp Curd
- 2 tsp Chilly powder
- 3 tsp Coriander powder
- 1/4 tsp Turmeric powder
- 2 large Coconut milk
- 1 nos Onion thinly sliced, large size
- Curry leaves few, Karivepilla
- Salt, to taste
- Oil, to taste
Preparation
Step 1
Make a nice paste of the ingredients from 2 - 5 and put in the cleaned chicken.
Step 2
Heat Chilly powder and coriander powder and add into the above paste.
Step 3
Put salt according to your taste and keep this marination for 1 hour.
Step 4
Heat the oil in the pan and cook the onions till they are brown and sticky.
Step 5
Add the marinated chicken to this and let it cook for some time.
Step 6
When it is half cooked add little coconut milk to this and let it cook nicely.
Step 7
Add the rest of the coconut milk to this and take it off the heat after 2 minutes.
Step 8
Put Coriander leaves and Curry leaves for taste. Serve hot!
Tip
Let the curry rest for at least 15 minutes after cooking — the flavours deepen as it sits. Reheated curry almost always tastes better than fresh.
