Kerala Carrot Thoran

Ingredientsfor 4 servings
- 4 nos Carrot
- 1 piece Ginger
- 3 nos Green chilli
- 1 cup Coconut — grated
- Mustard seed, to taste
- 1 Stem Curry leaves
- Salt, to taste
- 2 tbsp Oil
Preparation
Step 1
Wash and clean the carrot.
Step 2
Grind carrot and set aside.
Step 3
Smash the ginger and green chilly together. 4)Heat the oil in a pan and add mustard seed to allow to crackle.
Step 4
Add the smashed ginger,green chilly,curry leaves salt and cook for about 2 minutes.
Step 5
Add carrot,let it go for a while.
Step 6
Add grated coconut and cook it, stirring well.
Step 7
Turn off the heat and give it a good stir.
Step 8
Serve Kerala Carrot Thoran hot!
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
