Kerala Carrot Kheer
A dessert served during special occasions and functions. The mouth watering dessert is usually served after meals and you will never say enough to this dish. unique and appealing with a thick texture and cardamom flavor.
Ingredientsfor 6 servings
- 2 nos Carrot — grated
- 2 cup Milk
- 11/2 cup Sugar
- 5 nos Almonds Badam
- 1 tbsp Cashews
- Cardamom powder, as needed
- Saffron A few strands
Preparation
Step 1
For preparing Kerala Carrot Kheer, first soak the almonds and cashews together in warm water for about 30 minutes.
Step 2
Grind it to a smooth paste.
Step 3
Pressure cook carrots with 1/2 cup of milk upto 3 whistles.
Step 4
Grind the cooked carrots.
Step 5
Place the ground carrots and the remaining 1 1/2 cups of milk in a pan and let it bubble for about 10 minutes.
Step 6
Add sugar followed by almond-cashew paste.
Step 7
Boil, till it becomes a little thick.
Step 8
Add cardamom powder and saffron.
Step 9
Refrigerate it.
Step 10
Serve Kerala Carrot Kheer chilled.
Tip
Never rush the milk reduction by increasing the heat. Scorched milk adds a bitter undertone that ruins the entire payasam.
