Kerala Cabbage Thoran
Finely chopped cabbage stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 4 servings
- 500 g Cabbage
- 1 tsp Mustard seeds
- 10 nos Curry Leaves
- Onion chopped fine - 1 small
- 1 cup Coconut — grated
- Salt, to taste
- 2 Tbspn Dry Red Chillies — ground
- Coconut Oil, to taste
Preparation
Step 1
Heat pan, let the mustard seeds crackle in 2 tbsp oil.
Step 2
Sort the onions and crushed dried red chilly. allow to crackle curry leaves and add coconut with required amount of salt.
Step 3
Add cabbage - give it a good stir.5. Close and Let it cook for 5 minutes.
Step 4
Goes well with Rice.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
