Kerala Beef Roast | Malabar Style Beef Roast
Bursting with aromatic spices and bold flavors, Malabar Style Beef Roast is a testament to the region's gastronomic prowess.
Ingredientsfor 4 servings
- 500 g Beef — cut into 2 cm cubes, without bones
- 1/2 tbsp Ginger Garlic Paste
- 200 g Onion — finely sliced
- 3 nos Green chillies — slit
- 100 g Tomatoes Cut in small pieces
- 3/4 tbsp Chilly powder Kashmiri
- 1 tbsp Coriander powder
- 1/2 tsp Turmeric powder
- 1/4 tsp Garam masala powder
- 1/2 tsp Black Pepper Powder
- 1/4 tsp Aniseed/Fennel seeds (Perinjeerakam)
- 15 g Cashew nuts Roasted and — ground
- 1 nos Lemon Juiced
- Curry leaves, a few
- Coriander leaves, as needed — chopped
- 1/4 cup Coconut flakes
- Coconut oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing Kerala beef roast, first mix together washed and drained beef, 1/4 tsp turmeric powder, required salt, 1/4 tbsp ginger garlic paste and one sliced onion.
Step 2
Pressure cook the beef in one cup of water for 15 to 20 minutes until the beef pieces are done.
Step 3
Pour oil into a pan and heat it and fry the coconut flakes until golden in color. Remove the coconut flakes and set aside. Add remaining sliced onions, green chillies and curry leaves. cook for a while until onion turns golden in color.
Step 4
Add remaining ginger-garlic paste and cashew nut paste. cook well and simmer.
Step 5
Add chilly powder, coriander powder, remaining turmeric powder and cook well.
Step 6
Add tomato pieces and cook in medium flame for a few minutes.
Step 7
Add cooked beef with little gravy and Stir everything together thoroughly. Add garam masala, aniseed powder, pepper powder and lemon juice.
Step 8
Roast the beef for a few minutes until the gravy has thickened. Keep adding more gravy little by little and keep roasting. Keep on roasting till the watery content has fully gone and allow the beef pieces to become well roasted.
Step 9
Add fried coconut flakes and chopped coriander leaves and Stir everything together thoroughly. Keep roasting in medium flame and take it off the heat. Kerala Beef Roast is ready. Serve hot in a serving dish.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
