Kerala Beef Fry | Nadan Beef Fry
This beef, locally known as Nadan Beef Fry, is an iconic dish from the cuisine of Kerala, celebrated for its deep flavors and rich cultural heritage.

- 1/2 kg Beef Sliced into small pieces
- 10 nos Shallots (Kunjulli)
- 2 nos Bay leaves
- 1 tbsp Ginger Garlic — crushed
- 2 nos Green chillies Slit — optional
- 1 nos Onion — sliced
- 1/2 cup Fresh coconut slices
- 1 tbsp Red chilli powder Kashmiri Chilly Powder+Red Chilly Powder
- 11/2 tbsp Coriander powder
- 1/2 tsp Pepper powder
- 1 tsp Turmeric powder
- 4 sprig Curry leaves
- 2 tbsp Coconut oil
- 1 tbsp Garam masala Kerala style
- 1 tsp Mustard seeds
- Salt, to taste
- 4 nos Cloves
- 3 nos Cardamoms
- 1 long Cinnamon stick
- 2 tbsp Fennel seeds (Perumjeerakam)
- 8 nos Black pepper corns
- 4 nos Fenugreek seeds (Uluva)
- 2 nos Dried Red chillies
Preparation
Step 1
For preparing Nadan Beef Fry, first take all the required ingredients. Remember to slice beef into very small pieces. Wash well and drain.
Step 2
Heat required oil in a non stick pan. Later, for cooking beef we will be using a pressure cooker.
Step 3
When oil is hot, first let the mustard seeds crackle. Then add the coconut slices and fry to a golden brown color.
Step 4
When the coconut slices are golden in color, add some fresh curry leaves and stir.
Step 5
Next, add the sliced shallots, crushed ginger-garlic and stir.
Step 6
Stir in all the powder ingredients one by one: chilly powder, garam masala powder, coriander powder, turmeric powder, salt and pepper powder. Stir in low flame until the raw smell leaves. Add little more coconut oil while sauteing. (Note: You can add few pepper corns and little salt to coconut oil for preservation).
Step 7
Now, add the drained beef.
Step 8
Stir everything together thoroughly and add two slit green chillies. Transfer the contents to a pressure cooker and cook beef until done.
Step 9
Heat the oil in an iron kadai or non stick pan. Add few curry leaves and sliced onion. cook well.
Step 10
No need for the onion to brown. Add the cooked beef.
Step 11
Give it a good stir until it is completely sauteed and beef pieces are browned. Kerala Beef Fry is ready.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
