Kerala Beef Fry
Pan-fried until the edges go dark and crispy, this beef fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 6 servings
- 1 Lbs Beef — cubed
- 2 nos Onions large size
- 1 Bulb Garlic
- 2 Inches Ginger
- 4 Stalks Curry leaves
- 1 tbsp Mustard seeds
- 2 tbsp Coriander
- 1 tsp Turmeric
- 1 tbsp Chili powder
- 1 tbsp Garam masala
- Cilantro, to taste
- 1 tbsp Vinegar
- Salt, to taste
- Water, to taste
- 2 tbsp Olive oil
- 1 tsp Coconut oil for flavoring
Preparation
Step 1
Marinate beef cubes in a little vinegar.
Step 2
Chop up onions, garlic, and ginger.
Step 3
In a huge pot, heat 1 tbsp of olive oil and add mustard seed until they pop.
Step 4
Add onions, garlic, ginger, and curry leaves to this and cook until nicely browned.
Step 5
Add coriander, turmeric, chili powder, garam masala, and salt. Fry for at least 5 minutes.
Step 6
Add beef and 2 cups of waters. Bring to a boil, cover, and turn heat to low to simmer. Give it a stir now and then.
Step 7
After approximately one hour, check tenderness of beef and add water if necessary.
Step 8
During this time, fry up other half of onions, garlic, and ginger with mustard seeds, curry leaves and set aside.
Step 9
Once beef is as tender as desired, add fried onions and coconut oil to mixture with cilantro and cook for about 2 minutes. Serve hot!
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
