Kerala Banana Halwa
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 6 servings
- 2 cup Ripe rajali banana/robust banana pulp
- 4 tbsp Pure ghee
- 1 cup Sugar
Preparation
Step 1
Cook banana pulp and sugar together in a thick bottomed vessel. Stir continuously till the mixture starts thickening.
Step 2
Add half of the required ghee and continue stirring.
Step 3
Add the remaining ghee as it thickens and continue cooking in low heat stirring continuously.
Step 4
To check whether the halwa is ready, roll a little quantity into a ball and if it does not stick to the palms the halwa is ready.
Step 5
Grease a plate and spread the halwa evenly with a flat ladle.
Step 6
Cut into desired shapes when its hot and separate only when its cooled.
Step 7
Separate the halwa pieces and store in container. Serve when necessary.
Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
