Kerala Banana Chips | Kaya Nurukku Upperi
This banana, known locally as "Kaya Nurukku Upperi", "Upperi" or "Nendran Chips" are a beloved snack that has become synonymous with the culinary culture of Kerala.
Ingredientsfor 4 servings
- 1 kg Unripe plantains(Vazhakka) large
- 300 g Coconut oil
- 1/2 tsp Turmeric powder
- 1 glass Water
- Salt, to taste
Preparation
Step 1
For preparing the traditional styled banana wafers, first peel off the skin of the large sized plantains.
Step 2
Immerse in salt water for 30 minutes. Dry the plantains after taking out of water.
Step 3
Cut banana into 4 slices and then into small pieces.
Step 4
Get a plate and add salt, 1 glass water and 1/2 tsp turmeric. Set aside.
Step 5
Heat sufficient coconut oil in a kadai or wide pan.
Step 6
When oil is hot, add the banana pieces. Now reduce the flame to low. Fry for around 10 minutes.
Step 7
When the chips are 90% fried, pour 1 tbsp turmeric salt water into the oil. Now increase flame to medium.
Step 8
Fry for 1 minute. Remove chips from oil and drain.
Step 9
Kaya Nurukku Upperi is ready. Let's celebrate Onam.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
