Kerala Ari Unda With Jaggery And Coconut
Kerala Ari Unda is an evening snack made with rice jaggery and coconut made during festival season in kerala.
Ingredientsfor 5 servings
- 250 g Rice Matta rice/ Red Kuttari/Par Boiled Rice
- 400 g Jaggery
- 2 cup Coconut — grated
- 8 Pods Cardamom
Preparation
Step 1
Wash rice properly and Strain the water well.
Step 2
In an aluminium (thick bottom) kadai roast the rice. Keep stirring on medium heat.Roast it till the rice breaks.
Step 3
Bite the rice to see if it cracks easily. The rice pops up.
Step 4
Transfer to a wide plate to cool a bit.
Step 5
When the rice is cooled a bit and still warm grind it Finley add the cardamom powder.
Step 6
Transfer the scraped coconut into a grinder and grind it for 3 minutes before adding jaggery.
Step 7
Add grated jaggery slowly into the grinder. Grind the mixture into very fine paste.
Step 8
Stir in the rice powder slowly into the grinder. Grind till everything is well mixed.
Step 9
Roll it into balls and serve Ari Unda.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
