Kerala Ari Payasam | Rice Kheer
The taste of Kerala Ari Payasam – a rice kheer made with jaggery, coconut milk, and Kerala red rice. Perfect for Onam, Vishu, and special occasions.
Ingredientsfor 10 servings
- 1 cup Raw rice
- 5 cup Water
- 2 pinch Salt
- 1 & ½ litre Milk
- ½ tsp Cardamom powder
- 500 g Jaggery
- ½ cup Cashew nut and raisins
- 1 tbsp Ghee
Preparation
Step 1
Wash and drain the rice.
Step 2
Add drained rice into a pressure cooker and add required water and let it go for 3 whistles.
Step 3
Meanwhile melt jaggery in ½ cup water and strain it.
Step 4
Once the rice is cooked and pressure is released, open the pressure cooker.
Step 5
Pour the jaggery water into the cooked rice and Bring to a gentle boil until all the water is absorbed.
Step 6
Now pour the milk.
Step 7
Fold everything together gently and add cardamom powder.powder. Bring to a gentle let it bubble for 5 minutes.
Step 8
Finally fry some cashew and raisins in ghee and pour it over the payasam and mix.
Step 9
Kerala Ari Payasam is ready to serve.
Tip
Keep stirring throughout — the cream that forms on the sides should be scraped back in. That is where the richness comes from.
