Kanava Thoran
A popular fish delicacy from God’s Own Country. A fish stir fry that can be ed with a bowl of hot rice. The aromatic coconut mixture makes Kanava Thoran unique and special.
Ingredientsfor 4 servings
- 1/2 kg Squid — cut into very small pieces, kanava
- 1 nos Onion — sliced
- 2 nos Green chillies — sliced
- 1 tsp Chilly powder
- 1 tsp Coriander powder
- 1/2 tsp Fenugreek powder (Uluva)
- 1/2 tsp Turmeric powder
- 2 nos Red dried chillies (Kollamulaku)
- Mustard seeds A pinch
- 1/2 sprig Curry leaves
- 1 cup Coconut — grated
- 3 tbsp Oil
Preparation
Step 1
For preparing Kanava Thoran, heat up a pan.
Step 2
Add water, kanava, onion and green chillies.
Step 3
Season with salt and let it cook.
Step 4
Grind together coconut, chilly powder, coriander powder, turmeric and fenugreek powder and grind once.
Step 5
Do not make a paste of it.
Step 6
Add this mixture to the cooked kanava.
Step 7
Heat the oil in another pan.
Step 8
Let the mustard seeds crackle followed by red dried chillies and curry leaves.
Step 9
Add cooked kanava mixture into it and mix it for sometime.
Step 10
Garnish with curry leaves.
Tip
This same method works for almost any vegetable: beans, beetroot, carrot, raw banana — swap the main vegetable and keep everything else the same.
