- Kallumakkaya : 25 nos
- Onion : 1 no
- Fennel seeds, a few
- Parboiled rice : ½ k gm
- Coconut : ½ no
- Turmeric powder, a few
Preparation
Step 1
Remove the outer dirt of the kallumakkaya with a knife.
Step 2
Cut the center part of kallumakkaya with the knife.
Step 3
Clean the inner part with water.
Step 4
Allow the kallumakkaya to be dry by putting them upside down in a vessel.
Step 5
Soak the rice in water for 6 hours.
Step 6
Crush the coconut and onion seperately in a mixer grinder.
Step 7
Grind the soaked rice, crushed coconut and onion together in a grinder.
Step 8
Put some cumin seed into it. Putting of turmeric powder is optional. 9) Fill each kallumakkaya with the rice mixture.
Step 9
Steam them in a vessel for some time.
Step 10
Remove the outer cover of kallumakkaya.
Step 11
Get some chili powder and salt and mix them well with little water.
Step 12
Dip each kallumakkaya into the chili mixture.
Step 13
Get a vessel. Pour some oil. Fry the kallumakkaya into it.
Step 14
Serve while still hot.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
