Kallumakkaya Nirachathu
Kallumakkaya nirachathu is my favourite malabar snack.These are rich in flavour,aroma and has its own distinguished taste.For preparing kallumakkaya nirachathu mussels are stuffed with rice flour mixture,steam cook and marinate in a spicy masala and.
Ingredientsfor 10 servings
- 25 Mussels
- 500 g Rice flour
- Coconut half portion
- 6 Shallots
- 1 tsp Cumin seeds
- 2 Green chilly
- Garlic half head
- 1/2 tsp Turmeric powder
- Salt, to taste
- Luke warm water, to taste
- Oil to fry
- Chilly powder
Preparation
Step 1
Gather all the ingredients need for grinding.
Step 2
Grind it well without adding water.
Step 3
In a large bowl add rice flour,coconut mixture,salt and water as needed,knead it to a smooth dough.
Step 4
Clean the outer part of mussels by scrubbing away all the dirt if any.Slowly slide thd knife through the slits and open them slowly without breaking the shells apart.
Step 5
Make balls of rice dough,stuff the dough into the shells.shape them neatly.
Step 6
Steam cook the stuffed mussels for 30 minutes.
Step 7
Break open the shell and take out the cooked stuffing taking care not to break or part the mussels sticking to the shell.marinate the cooked mussels in masala.
Step 8
Heat the oil in a vessel and fry it till golden brown.
Step 9
Kallumakkaya nirachathu is ready.Serve it with an evening tea.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
