Kakkurotti
Beef cooked the Kerala way — with patience, a heavy hand of spices, and enough coconut oil to make the purists happy. The meat is slow-cooked until it is tender enough to fall apart, then finished with intensity.
Ingredientsfor 5 servings
- Pathiri rice powder : 1 k gm
- White rice : 1/2 k gm
- Beef : 1/2 k gm
- Coconut 1 no
- Onion : 2 no.s
- Tomato : 2 no.s
- Chilli : 3 no.s
- 1 tsp 1 tsp (Perumjeerakam)
- Chilli powder : 3 tsp
- Coriander powder : 2 tsp
- Pepper powder : 1/4 tsp
- Turmeric powder : 1/4 tsp
- Garam masala powder : 1/2 tsp
- Oil : 4 tsp
Preparation
Step 1
Mix the whole of white rice, half a coconut pulp, perumjeerakam and grind with three cups of water.
Step 2
Blend this grinded mixture with the pathiri podi and make it to tight dough.
Step 3
Round this into small small pieces and flatten. Steam these pieces.
Step 4
Fry the remaining half of coconut pulp in a pan. Grind the fried coconut with enough of water. 5) In a cooker firstly heat some oil, then add onion,after it turns brown add tomato and chilly.6) Add chilli powder,coriander powder,turmeric powder & pepper powder. 7) Add the meat stock and cook it fully.
Step 5
To this add the grinded coconut and let it go for five minutes.9) In a nonstick cooker after heating a little of oil sandwich the beef curry and steamed pathiri pieces and cook well.
Step 6
Add some pathiri above it the masala part,just like that. Serve hot.
Tip
The coconut pieces should get slightly crispy along with the beef. They add a textural contrast that makes the dish.
