Kadala Curry (Kala Channa)
Cooked low and slow until the masala melds into the gravy, this quail curry carries the unmistakable warmth of Kerala spices — black pepper, curry leaves, and coconut. Pair it with steaming rice and a crisp pappadam.
Ingredientsfor 4 servings
- 1 cup Kadala kala channa
- 1/4 cup Shallots — cut into small slices, kochulli
- 1 nos Tomato
- 3 tsp Coriander powder
- 2 tsp Red Chilly powder
- 1 tsp Garam masala
- 1/2 tsp Turmeric powder
- 1 Spring Curry leaves
- Salt, to taste
- 3 tsp Oil
- 1/2 tsp Mustard seeds
Preparation
Step 1
For preparing Kadala Curry (Kala Channa), soak Kadala in water, till soft.
Step 2
Pressure cook it with little water and salt.
Step 3
Heat a drop of oil in a pan.
Step 4
Put coriander powder, chilli powder, garam masala and turmeric powder and fry it for 1 min.
Step 5
Get some cooked kadala and grind it with fried items.
Step 6
Heat a drop of oil in a pan add mustard seeds and curry leaves.
Step 7
Add shallots and fry.
Step 8
Add remaining Cooked kadala and pour some water.
Step 9
Add the tomato.
Step 10
Add the ground mix and close the lid and allow it to boil.
Step 11
Serve Kadala Curry (Kala Channa) hot!
Tip
The oil separating from the masala is your signal that the base is properly cooked. Do not add the main ingredient before you see those pools of oil on the surface.
