Kachil Kanji | Purple Yam Kanji
This mixed, or Purple Yam Kanji, is a Kerala dish celebrated for its simplicity and health benefits.
Ingredientsfor 4 servings
- 2 cup Kachil — cut into cubes
- 1 cup Coconut — grated
- 2 pinch Salt
- Water, to taste
Preparation
Step 1
Get the yam and remove the skin.
Step 2
Cut into medium sized cubes. Wash thoroughly 4-5 times.
Step 3
Get a pressure cooker and add yam, salt and water as needed (approx. 4-5 cups of water). Pressure cook for 2-3 whistles.
Step 4
When the pressure releases, open the pressure cooker.
Step 5
Add grated coconut.
Step 6
Smash it with a spatula. Adjust the consistency by adding hot water.
Step 7
Serve.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
