Just Chicken
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 3 servings
- Chicken : 100 gms — cut into small pieces.
- Maida : 3 tsp
- Pepper powder : ½ tsp
- Red chillies : 2 — crushed
- Salt, to taste
- Oil — for frying
- Egg : 1no
Preparation
Step 1
In a bowl mix the maida, salt, red chillies and pepperpowder.
Step 2
Break the egg and mix it with the dry ingredients.
Step 3
Stir in the chicken pieces and marinate for about ½ hour.
Step 4
Fry it in oil till it turns crisp.
Step 5
Serve while still hot with mint chutney or tomato sauce.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
