Jeeraka Kanji - Nutritious Recipe
Nutritious kanji prepared by cooking broken raw rice with other ingredients.
Ingredientsfor 2 servings
- 250 g Broken raw rice Nurukku (pachari)
- 15 nos Shallots (Kunjulli)
- 1 tsp Coriander powder
- 1 cup Coconut milk
- Salt, to taste
- 1 Coconut Coconut — grated
- 2 tsp Cumin seeds (Jeerakam)
- 1/2 tsp Turmeric powder
- 1 tsp Fenugreek seeds (Uluva)
Preparation
Step 1
Grind 11 shallots, coconut grated and turmeric powder well using a mixer grinder. Set aside.
Step 2
Add coriander powder, turmeric powder and fenugreek to hot water and boil(water¦s measure is taken according to the rice).
Step 3
Put the washed pachari to the above mixture of water and cook well.
Step 4
When the kanji is cooked well, add the coconut mixture that we had prepared first and stir it well. 5)Add coconut milk to it, give it a good stir and take it from the flame.
Step 5
Fry remaining four shallots in some ghee.
Step 6
Add the fried shallots into the prepared jeeraka kanji and boil it again for a few minutes.
Step 7
It¦s a healthy food for sick people and even during the time of fasting.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
