Jackfruit Seed - Drumstick Aviyal
A medley of vegetables cut into long batons, simmered until just tender, and bound with a rough-ground coconut paste and a spoonful of yogurt. Avial is the centrepiece of the Kerala Sadya and arguably its most loved dish.
Ingredientsfor 2 servings
- 10 nos Jackfruit seeds peeled and — sliced
- 2 nos Drumsticks sliced, Muringaka
- 5 Cloves Garlic — chopped
- 1/2 tsp Chilly powder
- 1/4 tsp Turmeric powder
- 5 nos Green chillies — slit
- 1/2 tsp Cumin seeds (Jeerakam)
- 1/2 Of Coconut — grated
- Curry leaves, to taste
- Coconut oil, to taste
- Water, to taste
- Salt, to taste
Preparation
Step 1
For preparing jackfruit seed - drumstick aviyal, grind grated coconut, chilly powder, turmeric powder, garlic and cumin seeds.
Step 2
Cook jackfruit seeds and drumstick in salt water with the above paste.
Step 3
When it is cooked well, add coconut oil and curry leaves. Stir everything together thoroughly and take it off the heat.
Step 4
Jackfruit seed - drumstick aviyal is ready.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
