Instant Pavakka Kondattam
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- 2 nos Bittergourd Pavakka
- 3 nos Green chillies
- 3 tsp Vinegar
- 1/4 tsp Chilly powder
- 1 tbsp Salt
- Oil — for frying
Preparation
Step 1
Cut Pavakka lengthwise and remove seeds and cut into thin pieces.
Step 2
Add vinegar (3 tsp of lemon juice is also fine), salt, chilly powder and green chillies (cut in lengthwise) and Stir everything together thoroughly.
Step 3
Set aside for 15 minutes.
Step 4
Microwave this mixture for about 10 - 12 minutes.
Step 5
Warm the oil in a pan and fry this mixture or just add some oil and microwave that for 1 - 2 minutes.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
